Ingredients

Brownie batter

  • 4 oz. (45 cup) 110 g (200 ml) sugar-free baking chocolate, chopped
  • 6 oz. 170 g butter
  • 1 cup (7 oz.) 240 ml (210 g) erythritol
  • 4 4 large egglarge eggs
  • 1 cup (4 oz.) 240 ml (110 g) almond flour
  • 2 tsp 2 tsp vanilla extract
  • ¼ tsp ¼ tsp salt

Cream cheese filling

  • 10 oz. (1¼ cups) 280 g (290 ml) cream cheese, softened
  • 13 cup (1½ oz.) 80 ml (45 g) powdered erythritol
  • 1 1 large egglarge eggs
  • 2 tsp 2 tsp vanilla extract
  • 1 tsp 1 tsp raspberry extract (optional)
  • 1 tbsp 1 tbsp lemon juice
  • 6 oz. (113 cups) 170 g (325 ml) fresh raspberries

Making low carb simple

Instructions

Instructions are for 24 servings. Please modify as needed.

  1. Preheat the oven to 350°F (175°C).

  2. Line a 9" x 13" (20 x 30 cm) baking dish with parchment paper so that the sides come up over the dish and can be used to easily lift the baked brownies from the pan.

  3. Use a microwave or a small saucepan to melt the chocolate and butter on low heat. When melted, add the sweetener and stir until the sweetener is dissolved.

  4. In a large bowl, mix eggs, almond flour, vanilla extract and salt. When thoroughly mixed, add the melted chocolate mixture and stir to combine. Pour the mixture into the prepared pan.

  5. Use a hand mixer or a stand mixer to blend the cream cheese and powdered sweetener. When creamy and smooth, add the egg and mix well.

  6. Stir in the vanilla extract, raspberry extract, and lemon juice.

  7. Gently fold in the fresh raspberries.

  8. Drop large spoonfuls of the cheesecake mixture over the brownie batter. Use a knife to swirl the cheesecake batter into the brownie batter by dragging the tip through the batter in horizontal and vertical lines.

  9. Bake for 35 to 40 minutes until set. Do not overbake. Let cool completely before serving.

Storage

Refrigerate leftovers if for some curious reason you have any!

    Yes, these can be frozen. For thawing, you would have best results letting them thaw on a counter.

    If you leave out sweetener entirely, these would likely be far too bitter.

    Made these for my son's Birthday Party today. Everyone had ice cream cake. My husband and I enjoyed the brownies. Delicious. My husband thought he would not get to enjoy desserts again on the low carb diet. So happy we found Diet Doctor. Everyone else had a slice and the women asked for the recipe

    People eating keto can eat these as they are very low carb and the fat is higher than the protein.

    They are not a 1:1 sub as coconut flour requires more moisture than almond flour does. It's also more carb heavy.

    You'll want to be sure the chocolate and butter are hot enough and melted thoroughly before adding the sweetener. Then be sure to mix so it blends well.

    Sure! Just keep in mind the sweetness ratios may be different.

    These are fabulous! This was the first keto dessert recipe I've tried and I was so skeptical because I make a pretty good regular cheesecake. These came out tasting like "regular" brownies and cheesecake - even hubby likes them and he's picky about anything tasting 'different'. I substituted the granular erythritol with Lakanto granulated monkfruit with erythritol because its all I had, and I didnt have raspberry extract. I did let them cool completely before serving. Oh, and I only had frozen raspberries so defrosted and drained. I have a feeling tonight the leftovers that have been refrigerated will be even better. Thanks for this recipe! Now I won't be so hesitant to try more.

    These brownies are scrumptious! I followed the recipe almost to a T, but used 8 ounces of mascarpone and 2 ounces of creme fraiche instead of cream cheese, because I forgot to buy cream cheese and surprisingly that's what I had in the fridge! The chocolate batter ended up a little thick, so the cheese filling was difficult to mix in. It looked more like a frosting, but it didn't subtract at all from the flavors. Absolutely delicious! Impossible to believe there's no sugar in these.

    I wouldn't heat them up in a microwave! Just let them thaw in the fridge or in a room not too hot otherwise could go off.

    Xylitol is so much better than any other sweetnrr andcrecomnended by the famous world nutriyionis, Patrick Holford, in all his Keto and GI/GL recipe books. I've been using it for yearsong before any of this high fat low carb stuff, and so have my diabetic friends on my recommendation and back to eating selected puddings again.

    IMHO Xylitol is so much better than any other sweetner and recomnended by the famous world nutritionist, Patrick Holford, in all his Keto and GI/GL recipe books. I've been using it for years, long before any of this high fat low carb stuff, and so have my diabetic friends on my recommendation and they are back to eating selected puddings again, using it for any recipe that requires sugar.

I suppose after eating keto for months chocolate and richness seems so unusual. Glad I can freeze it - will take it to visit friends. Took me quite a while to make - having to make 2 batters and then put together for baking. I also spent a lot of time trying to get the erythritol to melt into the choc/butter solution. I spent ages reheating in the microwave and constantly stirring and still had granules. gave up in the end. Does granulated erythritol not dissolve easily?

    In the UK where it seems impossible to get sugar free chocolate, I used 82% and 40g Stevia which worked well. (+ 20g Stevia in the cheesecake mix). I also swapped raspberries (I'm not a fan of pips) for a small handful of blueberries. Excellent recipe, DD: no one would ever know this was a low-carb treat! Note: Stevia instead of erythritol, not as well!

    Probably would have come out better if the butter measurement was in Tbs instead of ounces. I saw butter and 6 and assumed Tbs (because that’s what butter is always measured in), but later when I reread the recipe, I realize it says 6 OUNCES of butter. Annoying.
