My hubby and I really loved this meal. I did make a few alterations but it is pretty true to the original. With the wild salmon, I squeezed a little lemon juice on the onions and placed a lemon slice on top and underneath the fish. The caramelized onions were delicious and with all the unique flavors on the fish, made it outstanding. The side dish of wilted spinach, I just added shiitake mushrooms, crushed red pepper and tomato to make it more interesting. All in all, a pretty fabulous meal I will definitely make again.

Was amazed at all the five-star reviews: I have to agree with BuddingFlavor -- the spices on the salmon created an odd taste. DH barbecued the fish, and that didn't help (although it certainly didn't hurt). Didn't use the onions at all, and really didn't miss them -- don't believe they would have helped the flavors. We also didn't care for the spinach; there are much better recipes out there.

One of my new favorites. The salmon has a perfect spiciness, and the spinach is wonderfully flavored. I will definitely be making this again. So healthy, too!

Easy and yet very flavorful. The lemon spinach goes great with the other spices. With any fish be careful to test so as not to overlook as my large filet was done in 16 minutes. The complex favors may not be great to serve with kids.

This review is for the rub only. It was really good. I'm glad that I added ~ 1/8 c olive oil to the spices, which kept the salmon tender. I won't bother with the onions next time as they burned :-( This is a really nice alternative to the common teriyaki/soy sauce based marinades. Next time i may double the amt of rub., I subbed smoked paprika for the regular paprika. Great dish!!!!

This is going to be a new one in our weekly salmon rotation. The spinach was so good, I'm looking forward to preparing this again (even without the salmon). I think the cooking time was either just a bit long or too hot, but otherwise a great recipe which will be a repeat for sure, such a nice blend of spices I wouldn't have thought to have put together with salmon. Served with roasted garlic mashed potatoes.

This recipe was not a hit with my family, and it will not make it into my repeat pile. I thought the spices on the salmon were interesting, but they proved polarizing among my diners. Specifically, my husband hated them. Perhaps the flavors are richer when the fish is grilled or cooked on cedar planks (as other reviewers cooked it), but simply rubbing on spices and baking the fish made it seem dry--I think the rub might've worked better if the spices had been mixed with olive oil and painted on the salmon. The onions didn't seem to add any flavor to the fish, and were bland and boring on their own. Finally, the spinach has potential, but be warned: It cooks way, way down. Two 6 ounce boxes are hardly enough for four side dishes, per the recipe serving size. Taste the spinach as you go to avoid adding too much lemon.

I've made this at least three times since I found the recipe. The spice rub is amazing and goes well with the lemon garlic spinach. I do cut the cooking time down by five minutes, but my husband and I prefer our fish slightly less done. He loved this recipe the first time I made it, and it is quickly becoming one of my favorite salmon recipes...so quick and easy, too!

My favorite part of the recipe were the onions...NEVER thought they would turn out so delicious and caramelized by roasting under the fish. The spices were different...not what I am used to using with salmon (I usually stick with the standby of lemon and dill)...but it was very good. I don't know if this will become a standby recipe for my family but we'd definitely use it perhaps once a month or so. My kids liked it too.

I loved the flavors in this dish! The lemon added a nice tanginess to the spinach, which was a great contrast to the sweet caramelized onions. To check out my post about this recipe and see step-by-step photos go to: http://www.icancookthat.org/2011/12/spice-rubbed-salmon-with-lemon-garlic.html

When did this recipe come out? 4 years ago? Anyway, I have been making this recipe at least once per month since the recipe was first listed in Cooking Light. It is so quick and easy and tasty, I cannot brag about it enough. There is also something about the onions roasting in the pan with the salmon, they come out so sweet, crisp and tasty as well. This recipe is a must try at least once for anyone who looks at the recipe and contimplates making it. If you make enough to have leftovers for lunch the following day (like I normally do), reheat it in your toaster oven at work. It comes out the best that way. Microwaved fish is never a good idea..

This is one of my go-to salmon recipes. I frequently make it for weeknight dinner but would also make for guests. The onions come out sweet and are amazing with the spinach. I make as-written except with a 1 lb fillet. This also comes together so quickly, put the spice rub and sliced onions together while the oven preheats. After the fish goes in, I put together CL's Creamy Parmesan Orzo, and do the spinach at the end.

Omitted cilantro as I didn't have any and don't like it much anyway. Only one small issue -- I wished I had a bit more spinach to go with the salmon. But on the whole this was absolutely delicious and easy, and turned out great!

Well, after reading the reviews, I am definately outnumbered rating this recipe! I did the recipe as is, but used a smaller portion of salmon. It went well with the riesling, which is the reason I picked the recipe. However, I found it bland rather than strongly seasoned. The onions would have been better carmalized, perhaps? The spinach was bitter, but I might have had a bad batch of spinach. True test? My husband wouldn't finish it. I will try the leftover salmon over a salad. Too many other salmon recipes to bother with this one again.

I don't like roasted fish, so I used the spices as a rub on individual filets. I doubled the amount of spice and added 1/2 t. brown sugar, then allowed the flavors to sit for an hour. I pan-seared them in a 2 t. hot olive oil about 4-5 minutes a side, removed them and added the onions to the hot pan to saute in the spices, adding the spinach at the very end. I plated the fish on the bed of onions and spinach and deglazed the pan with a splash of chardonnay and lemon juice, served with tabouleh salad and slice avacado. Excellent!

Delicious. I would recommend microwaving the onions for a minute or two first--they were underdone. I used sweet onions. Wonderful! As per a previous review, I covered for the first 10 minutes with foil, and it stayed very moist. I topped with some of the onions, the cilantro, and served with lemon wedges. I mixed the rest of the onions with the spinach. Will definitely make again. Fancy enough for company, but easy enough for every day.

This is delicious!! I did not make the spinach because I didn't have any on hand. I was mainly looking for a great way to season salmon, and this definitely fits the bill! The seasons blend very well together, and I loved the cilantro on top at the end. Great dish that I am excited to share with family and friends!

So easy and so delicious! The seasonings were great. I had the exact amount of fish but needed twice the amount of seasoning. The lemon on the spinach brightened up the dish perfectly. I would recommend a squirt of lemon on the fish as well. We served with dill carrots, which went surprisingly well and some garlic roasted potatoes. Great dish for company -- very little effort, lot of enjoyment.

The combination of spices for the rub are very delicious on the salmon. I did need to cook my fillet a little longer to fully cook the salmon. The onions were sweet and I added those to some leftover rice I had on hand and served with the fish and spinach. My husband even commented again this a.m. that he thought the meal was outstanding.

you must try this one! I never would have thought that cin. and salmon would be good--actually, it was insanely delicious! I disagree about the onions. coat the fish on both sides and the onions get sweet and carmelized. I did it on an indirrect heat gril and my house didn;t smell like fish after!

Great spice rub. Will make again definitely but probably without the onions. They tasted too fishy and did not seem to add much.. Forgot to serve with cilantro. made half the recipe served with mashed yukon golds and the spinach as directed (minus the lemon juice and used regular spinach) Even my non-fish eating husband thought it was great. Really good spices for salmon's richness..
